PMS color question...

i have designed posters, packaging glossy matte, brochures, websites etc... based around logo. trying send files print , make sure colors match.

 

i concerned logo. on brochures etc. not able use pms color on of them. company not spend money takes make parts match fine.

 

but need packaging match. in illustrator pantone color should choose make sure match best? process coated, solid coated etc.

i have never done project big , printed many things together... sorry if question sounds dumb... sure answer it.... info appreciated thank you!!!
